Colombia La Roma is a specialty coffee originating from the Gaitania region in Tolima — widely recognized as the birthplace of Colombian coffee. Despite historical challenges, local producers here consistently push the boundaries of high-quality coffee cultivation. This lot was produced under the Black Condor Project, an initiative supporting over 100 independent farmers through fair prices (18–20% above market rates), educational workshops, and access to modern processing infrastructure.
The project was spearheaded by Emmanuel, a producer raised in a multi-generational coffee family. In 2016, he and his family established a centralized processing station to help farmers from more than 15 surrounding villages process their coffee in a controlled, quality-driven manner. This ensures a clean, consistent sensory profile while meaningfully raising the living standards of the local community.
Colombia La Roma undergoes a traditional washed process that highlights the natural clarity and elegance of the Caturra and Castillo varieties. Meticulous cherry selection, controlled fermentation, and slow drying result in a balanced, harmonious flavor profile.
In the cup, this coffee offers notes of rich chocolate and almonds that form a sweet, creamy base, complemented by hints of red berries bringing crispness and gentle fruit acidity. It features a smooth, velvety texture and a pleasant, long finish. Highly versatile, it shines both as espresso (emphasizing its chocolate-nutty depth) and in filter brew methods, where its fruity and complex nature comes to the fore.
